Put all the dates into a food processor and pulse until they form paste. Add the remaining ingredients and blend until the mixture starts to clump together, scraping down the sides to redistribute the mixture once or twice. Add a little water if the mixture is too crumbly. Divide the mixture into 12 and roll into balls (approximately 25g each). Store in a covered container for up to a week, if they last that long!
